Put me down as one of those that preferred Quake. Piper says she wants to own her own restaurant. Well, managing one would be a first step in that direction.
As for P3, the only reason they had that was so they could feature the latest Hot Band. Can you say "ratings gimmick', boys and girls, I know you can. Since many of said bands have since vanished into obscurity, this only helps more to date the series.
And there was times that Piper said P3 wasn't pulling in a lot of money. If that was the case, how could they afford those bands. Did said bands preform for free?
Nope, Quake for me.

Much as I liked some of the music at P3, yeah, I'd go with Quake. Mostly because it reminds me so much of season 1 Piper, who I love and miss.

Since many of said bands have since vanished into obscurity, this only helps more to date the series. Yeah, Tim pretty much said it. P3 had "WB mandate" scribbled ALL over it. The Frog Network wanted Charmed to have a young, hip nightclub they could feature popular (signed to a WMG label) bands on, akin to the Bronze from Buffy, so Piper suddenly put her restaurant dreams on hold and started a nightclub. It's hilarious how the the first big appearance for P3 was in an episode centered around Dishwalla. You know, a one-hit-wonder from the late 90s that most people have forgotten? Or, how the 100th episode started with a performance from Michelle Branch, a pop singer from 10-15 years ago that most people have also forgotten? Even the last musical guest, Liz Phair, dates the show pretty badly, as it was during her 2003-05 era pop "comeback" (or, "sellout," according to indie fans who liked her earlier, edgier stuff).

The appearance of these musicians have literally time locked the series into the late 90's/early 00's. Watch any of these episodes in 2015 and one can be forgiven for thinking Dish Who?
And isn't it amazing that Piper, someone who knows NOTHING of running a night club, was able to make a go of it.
They should have stayed with Quake. Heck of a lot more credible.

When they started having the budget cut down, I'm not sure why they didn't have Piper get back into cooking. Seemed like the perfect opportunity. She really needed to do something she enjoyed in later seasons and Kern said himself that the musical guests never had any impact on ratings. Maybe convert P3 into a bar-restaurant.

Or do something like they did in the comics - sell it so she could open "Halliwells". Although personally I would've preferred her going back to just catering out of the Manor like we saw in Season One. That way she could be home with the kids and still be doing what she loved doing best.

I'm not sure about either place really as I liked both of them.
Now in terms of food and music though Quake could've had a little stage area somewhere over in the corner where people could sing had the show kept that place still or P3 could've been turned into a nightclub/restaurant type establishment like p3nathan mentioned already say because of competiton from other clubs for e.g. which could've solved that problem there also IMO.

For example, midway through the 5th season of BH 90210, the Peach Pit After Dark nightclub was introduced into the show (And, for the exact same reasons as P3 was introduced into Charmed--musical guests!), but unlike Quake, the Peach Pit diner didn't vanish for good. The characters still hung out there until the very end. There was room for both.

Of course, the reason we didn't see Quake again is because the sets had to be torn down to make room for P3. Charmed clearly didn't have the studio space that BH 90210 did.

Yes it is a shame we couldn't see both I mean the sisters could've gone on dates at Quake or met there together for lunch and had P3 still.
In my Charmed stories Piper owns P3 but characters from there have gone Quake still afterwards for lunch and dates etc.

Before I relocated them to Lovecraft Country, Rex and Hannah often had lunch at Quake.

Oh I so would take Quake over P3. It fitted the show so well in season 1. A night club just didn't feel right, we all know it was only put in because of WB pressure and using musical guests.
But again it never made sense for Piper to own a club. I can see perhaps a restaurant, with maybe some light entertainment on Friday and Saturday nights with a small stage.
But a full blown club no thanks. If they wanted a club just have the sisters go to a nightclub once or twice a season for fun, or maybe Phoebe could be working in a club part-time while shes in college in season 2 and 3, so we can have the sisters meeting up there on occasions.

I can see perhaps a restaurant, with maybe some light entertainment on Friday and Saturday nights with a small stage. Or a piano if that didn't happen perhaps which a musician Piper's hired could play on during opening hours or any public members who could do that also or someone else going around the tables with a violin playing that lightly whilst people are eating unless that's a bit too much of course.

For all the time that was given to these bands performing (mere seconds per episode) what was the point? As others have said, I would've preferred Piper to continue to manage Quake, during S2 - S4 and we could see the sisters going to real clubs a few times per season (such as in 'Witches in Tights') then around S5 they could get rid of the Quake set and have Piper buy her own restaurant, or just buy Quake.

I'ld like if in season 8 Piper ad decided to sell the P3 and to open a small restaurant
The restaurant takes you all day but then Leo was free and could look after their kids
